This is a dessert fit for a king. I learnt this recipe from my grandmother who made this sweet using ingredients from in and around the kitchen. Although laden with calories, this is a wonderful treat.
What you need
Bread - 2-4 slices
Milk – 11/2 litres
Ghee – to fry
Sugar – 1 cup
Water – 2 cups
Cardamom – 2-3
Cashews - 4-5
Pistas – 2-3
Raisins – 4-5
Almonds – 3-4
Saffron – a few strands
Cooking instructions
For the sugar syrup
Mix one cup of sugar in two cups of water. Boil for 10-15 minutes to make syrup with a medium thickness consistency.
Add 2-3 ground cardamom seeds.
For rabri
Boil one-and-half litres of milk till it is reduced to quarter litre. Keep stirring in between.
For shahi tukra
Cut bread slices diagonally into two.
Fry in ghee on a low flame till golden brown and dip in the sugar syrup.
Remove immediately and arrange on a plate.
Spread the prepared rabri evenly on top of the sugar-dipped bread pieces.
Decorate with cashews, pistas, almonds, raisins and saffron.
